Sous Chef
Responsible for producing high quality meals and overseeing the kitchen operations in our Villa community. Sous Chef will utilize professional skills to guide the nutritional team to the new national standards of restaurant quality food in the skilled nursing industry while still maintaining superlative sanitation. Re-design the menu often based off resident preference and compliance to all nutritional considerations established by regulatory sources and maintaining all established budgets.
Essential Functions:
• Production of menus and recipes
• Compliance with food policies and procedures
• Order food and supplies
• Control of food inventories with particular attention being paid to overproduction and waste
• Ensure attractive preparation of food on the plate before serving
• Train new kitchen staff in the areas of food preparation and quality service
• Preparation of meals in a timely matter to maintain the highest quality product
• All other duties as assigned by Administration
• Assist Dietary Manager in hiring qualified staff
Qualifications & Requirements:
• Ideal candidate will have a minimum of three years' experience in a professional kitchen or equivalent with a culinary degree
• Must have knowledge about developing recipes that respond to special dietary requirements
• Able to be Serve Safe Certified within 30 days of hire date
• Must have knowledge of state food handling and kitchen regulations
• Must have knowledge of safe operation of all kitchen equipment and fire safety procedures
• Must be willing to work as a cook, server or utility
• Must convey a positive and professional image to residents, family members, visitors and all team members
